Cider house rules

WALLINGTON’S Flying Brick Cider House celebrated the first-ever World Cider Day last Friday, with a series of demonstrations by master maker Nyall Condon.
Nyall’s been at the Flying Brick since it began and loves the creativity of making cider.
As well as producing the Brick’s main varieties, Nyall and his staff churn out a variety of original batches.
“Every batch we produce can be a new and exciting direction,” he said.
Nyall’s other favourite part of the job is the feedback.
“Nothing makes us smile more than hearing someone – who doesn’t know we are listening – raving about one of our ciders,” he said.
